A Sticky Teriyaki Tofu, Aubergine & Mushroom Bowl With Rices

A sticky teriyaki tofu, aubergine & mushroom bowl with rices noodles & side of tenderstem ?
This recipe kind of flopped and wasn’t supposed to look like this at all but it came out tasting really good. I’m going to include the recipe I was supposed to follow so you get a better result.

INGREDIENTS:
– 1 block extra firm tofu, drained and sliced
– 1 aubergine, sliced
– 4-5 large mushrooms, sliced
– Cornstarch
– 1/2 tsp garlic powder
– 1/2 tsp black pepper
– 1/2 tsp salt
– 2-3 tsp minced ginger
– 2 cloves garlic
– 1 red chilli, sliced
– 2 spring onion, sliced
– 2 tsp brown sugar
– 2-3 tbsp soy sauce
– 1/2 cup water
– A few splashes of rice vinegar
– 1 tbsp sweet chilli sauce
– 1 tsp hot sauce
– Rice noodles (I used 3 nests for 2 people)
– Sesame seeds
– 1 lime – 1/4 juiced and the rest sliced as a garnishj
– Tenderstem broccoli (Or bok choi, choi sum, edamame would work well.)
– Chilli flakes

METHOD:
1. Drain & slice tofu then dip them in to some cornstarch and fry them in oil until they’re golden and crisp on each side. Lay these on a plate with a paper towel to absorb excess oil.
2. Heat some oil and add ginger, garlic, chillis and 1 of the spring onions. Cook down before adding the sugar, soy sauce, water, lime juice, rice vinegar, sweet chilli sauce and hot sauce. Allow the sauce to thicken up.
3. Start adding the aubergines and mushrooms then add tofu when the veggies are nearly done. Make sure they’re all coated in the sauce.
4. Now you can boil/sauté your chosen greens. I boiled some tenderstem broccoli.
5. Boil some water and cook noodles according to packaging instructions. Add to your veggie sauce and stir everything together until the noodles have absorbed some of the sauce.
6. Serve in to 2 bowls and add the greens and a lime wedge. Garnish with the other spring onion, some sesame seeds and chilli flakes.
