A simple pesto pasta 🍝 🌱 by @hello.kalin ,served with crunchy Brussels sprouts and hemp seeds

Ingredients:
8 oz chickpea rotini β€’ 3 cups fresh basil, loosely packed β€’ juice from 1 lemon β€’ 2-3 chopped garlic cloves β€’ pinch of salt β€’ 1/3 cup of pine nuts (or raw almonds or raw walnuts) β€’ 1/4 cup avocado oil or evoo β€’ (If you want oil-free, try subbing 1/2 to a whole avocado for a thicker sauce) β€’ about 8-10 brussels sprouts

Method:
De-stem the sprouts and cut into thin pieces. Toss with a dash of avocado oil, salt and pepper and cook in a skillet until crispy, which just takes a few minutes. You can also roast for 15 minutes at 450Β°F β€’ In a food processor, blend up the basil, lemon juice, garlic, salt and nuts. Add in 1/4 cup avocado or extra virgin olive oil and blend until it’s well combined but not too smooth. β€’ Cook pasta according to directions. Drain pasta & toss in the pesto, mix in the brussels and enjoy!
