A quick and easy vegan dinner that you can make in less than 10 minutes.
I was inspired to make my own version of pho as I walked around the grocery store and found some ingredients that I’ve never used before but, was really impressed by.
To make this recipe at home here’s what you’ll need:
*6 cups water (or veggie broth)
*1 broccoli crown
*4 oz brown rice noodles
*2 not-chick’n bouillon cubes by @edwardandsons
*2 green onions
*crushed red pepper flakes for garnish

1. In a sauce pan bring your water or veggie broth to a boil, add your broccoli & your brown rice noodles. Boil for about 5 minutes (until noodles are tender)
2. Drain your broccoli & noodles, saving some of the water.
3. Add your noodles back to your sauce pan and add your bouillon cubes. Mix together until the cubes dissolve.
4. Add the saved water back to your noodles for a brothy soup (or you can add a small amount of the saved water for a saucier dish).
5. Garnish with your green onions & crushed red pepper.
6. Serve & enjoy!
