A Massive Perk Of Working From Home Is Getting To Make Fresh

A massive perk of working from home is getting to make fresh lunches everyday rather than a boring old Pret run (soz Pret, love ya really!).

This was a healthy lil lunch of quinoa salad with halloumi & flatbread crisps 🥗

INGREDIENTS FOR 3 SERVINGS:

• 250g block halloumi (sliced)
• olive oil
• 2 multi-seed flatbreads/thins (torn into pieces)
• 1 courgette (halved lengthways then chopped in half moons)
• 1/4 cucumber (halved lengthways, deseeded & chopped in half moons)
• 4 spring onions (thinly sliced)
• 4 tomatoes (sliced into wedges)
• pinch dried dill
• few mint leaves (chopped)
• 1 lemon
• 1 garlic clove
• 150g dried quinoa

METHOD:
• Heat oven to 200fan & grill to high
• Cook quinoa according to pack instructions then leave to cool
• Put courgette slices in a roasting tray with a drizzle of olive oil & some seasoning. Cook in the oven for 20 mins.
• Make a dressing with the lemon juice, crushed garlic, 4tbsp olive oil, seasoning, dill & mint
• Drizzle olive oil over the torn flat bread then stick it under the grill until crispy
• Fry the halloumi slices until golden
• Mix the roasted courgette, tomatoes, cucumber, spring onion, quinoa & dressing then serve topped with halloumi & flatbread crisps
