A little creation I made for the kids today, adapted from a baked donut recipe that is always a winner! These are my duffins (donut/muffins) filled with vegan Nutella style spread. They’re gluten free, dairy free and oil free. They’re a much healthier option for a sweet treat without remotely lacking in yummy flavour!

150g gluten free flour (or any flour you like).
120ml plant milk.
1 very mashed banana.
3 Tbsp nut butter, I used smooth @pipandnut but almond or cashew will work.
4 Tbsp maple syrup.
1/2 tsp bicarbonate soda.
1 tsp baking powder.
1/4 tsp salt.
2tsp vanilla essence.
Filling of your choice, I used @vego_chocolate hazelnut spread.

Whisk all ingredients together, except the filling.
Line your muffin tin with 8 muffin cases/parchment paper.
Put a big spoonful of your batter in each one. Then add a tsp of your filling before topping each one up with the remaining batter.
Cook on 170oc for about 20 minutes until golden.
Dip the top of each one in sugar when hot a sticky?…you can leave this part out though.
….. try not to eat them all! ???
