A bit scarce with the strawbs as a lot had gone mushy but this still was a yummy breakfast!

Today I am going to try and have a better day. I hope I don’t smash anything expensive or try to burn the house down 😬
In order to try and start the day off right, I made myself some waffles as I had not had them in a LONG time! I topped them with @aldiuk vanilla vegan yoghurt, strawbs and lashings of golden syrup! The recipe is really simple (I just use my normal pancake recipe) but I scaled it back as I knew I was only going to make two waffles.

Waffle recipe (makes two)

3 heaped tsp plain flour (about a third of a cup)
3 heaped tsp self raising flour (about a third of a cup)
1/2 cup plant milk
1/2 tsp vanilla extract

1. Plug the waffle maker in and leave to heat up.
2. Mix all the ingredients together until smooth. If your mixture is to thick, add a touch more milk.
3. Add a small scoop of margarine or oil to the waffle maker. Leave to melt and then wipe it around the waffle maker as this will help the waffles not stick.
4. Pour the waffle mixture into the maker, make sure you scrape down the sides of the bowl! Place the lid on the waffle maker and then I flip it over immediately so the mixture coats both plates. Leave for a few minutes and then turn the waffle make on to the other side. Once both sides are golden, you are ready to serve!
