A bit busy this week so sharing this recipe with the hope that maybe you’d continue your vegan journey at home even without me. ?

Fusilli Arrabbiata
Serves 4 | 399 cal | 9 P | 74.4 C | 9.3 F

300g pasta of choice (I used fusilli)

SAUCE
-1 tbsp Olive oil
-4 cloves garlic, minced
-2 tsp crushed red pepper flakes (can add more. What does you heart tell you? Hahaha)
-50 g tomato paste
-1 can crushed tomatoes (750g)
-3 pinches salt (more to taste)
-2 tsp. maple syrup/sweetener of choice (more to taste)

In a pan, add olive oil and garlic stir until golden brown (about 2 min.) | add red chili flakes stir for 2-3 mins. or until fragrant | add tomato paste stir for 2-3 mins or until color has slightly darkened | add tomatoes, salt, and sweetener of choice | cover and let simmer for 10 mins. Remove cover and let simmer for about 10-20 mins until reduced slightly. | Mix Cooked Pasta

Optional: Vegan Parmasan and Basil
