A Beautiful Afternoon Tea of Bananas Berry Scones!!!

Banana Berry Scones, yup! I had an over ripe banana but not enough to make banana bread or such so I decided to try editing my basic scone recipe to include the banana.

Ingredients:
2 cups of self raising flour (you may need more depending on the size of the banana)
1/2 cup of coconut cream
1/2 cup of lemonade
1 mashed banana
1/3 cup of frozen berries

Method:

1. Preheat oven to 200°C (fan forced)

2. Mix the flour, cream, lemonade gently in a bowl.

3. Add the mashed banana and frozen berries and fold them in gently. Add more flour if the dough is too wet.

4. Tip onto a floured work space and knead gently

5. Gently press down until desired height and use sconne cutter or an upside down glass to cut

6. Place into “high sided” baking dish

7. Bake for 20 mins

8. Cut and Serve warm with your favourite toppings. Ours were served with vegan butter & jam with vanilla coconut yoghurt.

9. Enjoy!
