Good morning everyone, happy Sunday! Coming at yโ€™all with another savoury recipe – yes I did say savoury ๐Ÿ‘€ This pesto pasta is so easy to make & so delicious, making the perfect family treat! It can also easily be made vegan friendly ๐Ÿ’š As a pasta enthusiast, I very much approve! Whereโ€™s my pasta fans at?

Recipe:
โ˜† 1 jar sundried tomatoes, packed in oil,
โ˜† 1 cup fresh basil,
โ˜† 1/4 cup slivered almonds,
โ˜† 5 garlic cloves, minced,
โ˜† 1 tbsp fresh lemon juice,
โ˜† 1/2 tsp salt,
โ˜† Pinch of red pepper flakes,
โ˜† 1/4 cup extra virgin olive oil,
โ˜† 1/2 cup nutritional yeast/Parmesan/vegan Parmesan

~ serve with fresh pasta & flaked roasted almonds ~

Method:
โœช To make your pesto – start by roasting your almonds in a medium skillet over a medium-low heat, stirring frequently until golden brown. (4-5 mins)

โœช In a large blender cup – combine your sundried tomatoes (in oil), basil, toasted almonds, garlic, lemon juice, red pepper flakes, salt & pepper. Blend together until a paste has formed and your pesto has reached your desired consistency.

โœช At this stage you can add in your nutritional yeast/Parmesan and continue to blend. Your pesto will be slightly thick, this is perfectly fine! Use pasta water to thin when mixing with cooked pasta.
