My absolute favourite combination – soft creamy blue cheese with sautΓ©ed spinach, chestnut mushrooms and pillowy gnocchi makes a very quick but delicious vegetarian dish! ⁣

With just a few basic ingredients needed to make the rich and creamy dish, it’s perfect for a budget dinner and super warm/comforting too! ⁣

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬: 𝘚𝘦𝘳𝘷𝘦𝘴 𝟸⁣
– 1 tbsp olive oil⁣
– 250g chestnut mushrooms, sliced⁣
– 1 garlic clove minced ⁣
– 100g baby spinach⁣
– 400g pack gnocchi (I’m going to attempt my own next time!)⁣
– Zest of 1 lemon, juice of 1/2⁣
– Half a white onion⁣
– 60g Danish blue cheese, cut into rough pieces ⁣
– Knob of butter⁣
– Parsley, chopped⁣
– Parmesan, shaved for serving
