~20 Minute Instant Pot Dahl (vegan, gf)~
Winter is here, and she’s here to stay – which means I’ll be making soups and stews from here on out 😩 I whipped up this super quick Dahl in my instant pot and it truly did what needed to be done 🤤 Warm spices, creamy texture, served over buttery rice; this is my happy meal ✊🏻 Lentils are also jam packed with protein, so this makes for a perfect meatless Monday (or any day) meal 💯 Recipe below 🤙🏻

Ingredients:
1 tbsp olive oil
1 large onion, diced
2 jalapeños, seeded and diced
1 large tomato, diced
6 cloves garlic, minced
1 tbsp ginger
1 cup red lentils, rinsed
3 cups water or broth
1 lime, juiced
1 tsp cumin
1 tsp turmeric
1 tsp salt
1 tsp garam masala
1/2 tbsp curry powder
1/2 cup coconut cream or milk
Big handful cilantro

Directions:
Turn instant pot to sauté mode and sauté onions and jalapeños until softened, about 5 min. Add garlic, ginger, tomatoes, and spices and sauté about 2 more min. Add lentils, broth/water and stir well. Cook on high pressure for 20 min and let natural release for 10 min. Remove lid and add lime juice, coconut milk, and cilantro and serve over rice or with naan 🤤
