2-Ingredient Sweet Potato Gnocchi

This makes about 4 servings, but can & should make more to freeze
Lay gnocchi in single layers on baking tray to freeze
Ingredients:
500 g (~1 lb) sweet potatoes
150 g (~1 cup) all purpose flour + extra dusting
optional: season with salt & pepper, nutritional yeast
Instructions:
Roast sweet potatoes & remove skin
Mash with a fork
Gradually work in the flour
Add more flour if dough is too sticky, want it slightly firm but not too firm
Divide dough evenly and roll out into long ropes & divide
optional to create ridges: roll each section into 1 inch balls
Shape by rolling the ball onto the back of a fork pressing thumb into the ball & sliding down the back of the fork

I like to boil until they float to the top then quick fry them up with olive oil & fresh basil
