is Japanese stir-fried udon noodles with vegetables. When I have no idea what to cook this is a super quick meal and incredibly delicious Japanese stir-fried udon noodles with cabbage, carrot, shiitake mushrooms, flavored with a savory sauce!

(1 serving)

Ingredients:
โ€ข1 pack of udon
โ€ข100g white cabbage(chopped)
โ€ข1/2 carrot(julienned)
โ€ข3 dried shiitake(cleaned & soaked till soft & sliced)
โ€ข5tbs shiitake water
โ€ข2tbs soy sauce
โ€ข1/2tbs vegetarian oyster sauce
โ€ข1tsp apple cider/vinegar
โ€ขpepper
โ€ขsalt
โ€ขoil

1๏ธโƒฃHeat a pan with oil over high heat, add in white cabbage, carrot and sliced shiitake, stir fry for 2 mins.
2๏ธโƒฃAdd in soy sauce, vege oyster sauce, apple cider and stir for 1 min until weโ€™ll cooperated.
3๏ธโƒฃAdd in shiitake water and udon, turn to low heat and simmer until the sauce is thickened and seasoned with salt & pepper. Taste test.
4๏ธโƒฃTransfer to a plate and served hot! โ˜บ๏ธ
