10 Minute Stir Fry! Recipe by @healthykelsii This is the best dinner for when you really don’t feel like cooking. Add a bunch of veggies to a pan and serve with your favourite noodles – you could also add tofu or tempeh 🍜

150g vermacilli noodles
1 tbsp sesame oil
4 garlic cloves, finely chopped
2cm ginger, finely chopped
1 small head of broccoli, chopped
1 capsicum, sliced
1 cup cabbage, sliced
2 spring onions, sliced
2 tbsp soy sauce
1 tbsp maple syrup
½ cup peanuts, roughly chopped
Handful of fresh coriander

Cook your noodles according to the packet instructions and set aside.

Add the sesame oil along with the garlic and ginger and cook for 2 minutes until fragrant. Add the broccoli, capsicum, cabbage and spring onions and cook until soft. Stir through the soy sauce, maple syrup and peanuts.

Add your noodles and toss everything to combine. Serve with fresh coriander. Serves 2-4
