10/10 would eat every day of my life!! 中
Made and tasted my first Shepherd’s pie tonight! This was so much fun to make AND eat! Definitely going to become one of my regulars now because of how tasty and simple it is, and I normally have all the ingredients needed at home already! Very proud of myself for trying a new recipe and happy with the results, definitely try it out and tell me what you think! 弘

-1/4 cup olive oil
-8 oz portabella mushrooms diced
-1 medium yellow onion sliced
-2 large carrots sliced
-2 teaspoon salt
-4 or 5 tablespoon flour
-2 teaspoon smoked paprika
-2 teaspoon garlic powder
-2 cups mushroom stock
-1 cup peas
-1 cup corn
-1 pack of Gardein
-1 tablespoon soy sauce
-rosemary for garnish
-gold mashed potatoes

1. Preheat oven at 375簞
2. Start boiling potatoes for mashed potatoes topping
3. Prep veggies
-dice mushroom, slice carrots, slice onion, rinse corn, rinse peas
4. Prepare filling
-cook mushrooms and Gardein on med-high heat for 1 minute
-reduce to medium heat, add in olive oil, carrots, and onions, cook until onions are softened
-reduce to low-med heat, add in flour, smoke paprika, and garlic powder, mix for 1 minute
-add in mushroom stock, peas, corn, soy sauce, salt, and cook until sauce thickens
5. Finish potatoes
-drain, add in butter, salt and pepper, almond milk, and mash altogether
6. Place in pan
-lay filling into a 2 quart baking dish, topping with mashed potatoes
7. Cook for 18-20 minutes
-garnish with rosemary
