1⃣ Creamy Mushroom Pasta 🍄 🍝  ready in 15 minutes (dairy-free & vegan)

Ingredients (serves 2):⁣

▪️ 100g cashews, soaked in boiling water for 5 mins
▪️ 200g pasta of choice
▪️ 2 tbsp oil
▪️ 200g mushrooms, I use chestnut but any will work
▪️ 1 tbsp dried sage (or oregano/basil)
▪️ 1/2 tsp paprika
▪️ 1/2 tsp dijon mustard
▪️ Salt, generous pinch
▪️ Squeeze lemon juice
▪️ 1 cup milk of choice (250ml) I used almond

1️⃣  Firstly soak your cashews in boiling water for 5 minutes and place your pasta on to boil
2️⃣  Meanwhile heat a pan with oil adding in the roughly chopped mushrooms and fry until they soften (5 minutes)
3️⃣ Now make the sauce by draining the cashews and adding to a blender along with the sage + paprika + dijon mustard + salt + lemon juice + milk and blend until smooth
4️⃣ Finally add your drained pasta to the mushrooms along with the sauce and mix it through and it’s ready to serve

2⃣ Tahini Sauce Noodles 🍜 tasty, versatile and extremely easy to make in less than 15 minutes!!

🛒  Ingredients (makes 2)⁣

▪️ 1 courgette, grated
▪️ 1 carrot, grated
▪️ 5 sun-dried tomatoes, chopped
▪️ handful green beans, chopped
▪️ handful broccoli florets
▪️ 200g buckwheat noodles (see FAQ’S below)
▪️ 4 tbsp tahini (see FAQ’s)
▪️ 3 tbsp tamari (gluten-free soy sauce)
▪️ 1 tbsp maple syrup (see FAQ’s for swaps)
▪️ 4 tbsp water

1️⃣ Firstly peel your courgette and carrot straight into a non stick pan
2️⃣ Now add in your chopped sun-dried tomatoes + beans + broccoli and fry for a couple minutes
3️⃣ Meanwhile boil your noodles
4️⃣ Prep the sauce by adding the tahini + tamari + maple syrup + water to a small mixing bowl and whisk until smooth
5️⃣ Drain the noodles adding to the pan along with the sauce and mix
