When the moon hits the sky like a great vegan pizza pie, that amore.

Do you love pizza, but hate the stomach pain and bloat afterwards? Well, I have a recipe for you!

Dough Ingredients:
2.5 cups of flour (sub 1-1 GF);
1 cup of warm water (think bathtub);
1/2 tsp salt;
1/2 tsp of sugar;
1/2 tsp of garlic powder;
1 tsp of olive oil, plus more for coating;
1/2 tsp parsley; and
1/2 tsp of oregano.

Topping Ingredients:
1 cup crushed tomatoes;
Everyday Seasoning from Trader Joes;
1 tsp of garlic salt;
2 cloves of garlic, crushed;
1/3 cup of fresh basil;
1 ripe tomato, sliced;
Balsamic for drizzle; and
Vegan mozz from Three Girls Vegan Creamery.

Directions: In a large bowl combine flour, yeast, sugar and spices and mix until combined. Using your hands or a dough mixer, add in water and oil. Knead the mixture until a soft dough forms. If the dough is too sticky, add a few pinches of flour; if it is too dry, add in 1 tbsp of water. Form a dough with the ball, smother it with olive oil and place it in a clean bowl. Cover it with a towel and place it in a warm spot, such as under the microwave with the light on. Let it sit until it doubles in size, approx. 2-3 hours. Preheat the oven to 450 degrees F. On a clean, floured surface, roll the dough out into a circle. You make need to use your hands to guide it to the shape you want. Place the dough on a pizza stone or baking sheet. Drizzle olive oil on top and sprinkle everyday seasoning from Trader Joe’s all over it. Add crushed tomatoes and then garlic, tomato slices, basil and vegan mozz. Cook for 25-30 minutes. If you cheese is not melting how you like, turn on the broiler for 3-4 minutes. Drizzle balsamic on top! Enjoy!
