We can’t get enough of this Rocket (arugula) & Basil Pesto!???
I mean, it’s getting smothered on EVERYTHING we can get our hands on! Pasta, roast veggies, pizza, bruschetta, in risotto, the list goes on!?
INGREDIENTS
Makes 1 cup
50g rocket
1 large bunch basil
3 Tbsp nutritional yeast
3 cloves garlic
1/4 cup pine nuts (walnuts are great too!)
1/3 cup EVOO
Juice of a lemon
1/2 tsp salt, taste and add more if desired
1/4 tsp black pepper
METHOD
1️⃣ Wash rocket & Basil. Pick basil leaves from stems.
2️⃣ Peel garlic & roughly chop.
3️⃣ Add all ingredients to a food processor and finely process until smooth, scraping down sides a couple of times or as needed.
4️⃣ Store in an airtight container in the fridge for 4 days.
Cook up some pasta of your choice and mix through 2-3 Tbsp of pesto.
