QUINOA CRUST PIZZA🍕

INGREDIENTS
1 ½ cup quinoa, uncooked
1 ½ cup water
1 tablespoon baking soda
1 tablespoon garlic powder
2 teaspoons salt
¼ cup grated parmesan cheese

Sauce:
1 tablespoons olive oil
4 tablespoons tomato paste
2 tablespoons water
dried oregano, to taste
salt, to taste
pepper, to taste
chile pepper, to taste

Toppings:
1 cup shredded mozzarella
5 mushrooms, sliced
½ bunch spinach
½ bell pepper, sliced
½ red onion, sliced

PREPARATION
1. Put the quinoa in a medium bowl and cover with water by about 1 inch. Cover and refrigerate at least 8 hours or up to overnight. Drain and rinse.
2. Preheat the oven to 425°F (220°C).
3. Put the quinoa in a blender, add the oil, baking soda, salt, water and combine to make a smooth, thick batter.
4. Spread the batter into the prepared pan and bake about 15 minutes.
5. Flip the crust over in the pan and bake about 5 minutes.
6. Spread the pizza sauce on the crust, almost to the edges. Sprinkle with the mozzarella and top with the mushrooms, spinach and bell pepper. Bake the pizza about 15 minutes.
7. Serve and enjoy!
