Kale & Brazil Nut Pesto Recipe ⬇️
Brazil nuts are one of the most nutrient dense foods- just one serving is a great source of selenium, magnesium, zinc, copper, manganese, thiamine, and vitamin E. Brazil nuts have the highest selenium concentration of any food – Selenium is crucial for thyroid health and also helps to reduce inflammation and oxidative stress throughout the body. Try this pesto for a healthy dose of vitamins!
🥄18 large Brazil nuts
🥄2 cups packed fresh kale
🥄1 1/4 cup packed fresh basil leaves
🥄3/4 cup packed fresh parsley leaves
🥄4 small or 3 large peeled cloves garlic
🥄3 T fresh squeezed lemon juice
🥄4 T nutritional yeast
🥄1/2 t sea salt
🥄1 T water
🥄4 T extra virgin olive oil
💥Combine all ingredients except olive oil in a good food processor
💥Slowly add olive oil until desired consistency is achieved – you may need more or less
💥Enjoy on noodles, pizza, toast, or anything else!
