I think one of my favorite meals ever is pizza with a side salad. Growing up we used to get pizza and antipasto salad from a place called Frderici’s. It was the thinnest crust and they had the most amazing house creamy Italian dressing. If you ate in the restaurant they would leave a huge bottle of it at your table which went to good use once your pizza arrived. Dipping pizza into creamy Italian dressing is one of life’s small pleasures and something my husband thinks is absolutely disgusting 😂. ⠀

This is my lightened up version, cauliflower crust with spicy marinara, vegan cheese, and sautéed mushrooms and leeks. Serve with a side vegan Caesar salad. The combo is definitely a vegan substitute for one of my favorite childhood takeout’s. ⠀


Vegan cauliflower crust:⠀
• 1 large head of cauliflower, cooked and riced⠀
• 2 flax eggs ⠀
• 4 cloves of garlic, minced⠀
• 1/4 cup vegan cheese⠀
• 1 tbsp corn starch⠀
• Oregano⠀
• Basil⠀
• Salt and pepper⠀

Preheat oven to 375. Make sure cauliflower rice is rung out and drained properly. Combine all ingredients and shape into a pizza. Bake for 45min, flip over and bake for another ten. Add your toppings and bake for 10-15min.
