Herby Spinach Lentil Stew with Broccoli Steaks and a Mint Yogurt DressingđŸŒżđŸ„•đŸ„Š

For dinner tonight I decided to make this lentil stew recipe It’s basically green lentils and vegetables (onion, carrot, courgette, and spinach) cooked with a bunch of thyme and of course vegetable stock!

Topped this yummy stew with these broccoli “steaks” – basically cut a broccoli head in half and toss in olive oil and salt before roasting in the oven for 30 minutes, turning over half way through!

Also added a creamy mint dressing, which is 2 tbsp of coconut yogurt mixed with a few big shredded mint leaves, a pinch of salt and some lemon juice!

I think that this is a perfect entry for  #heartywithheardofherbivore which I was nominated for this week. Emily’s initiative aims to show how a vegan diet is not at all boring and that we can still enjoy a variety of food, even though we are not eating animal products!

Personally I’m not a huge fan of pizza/burgers/pasta, which is what a lot of people would turn to when they think of a hearty meal, so for me a “hearty” meal is one that is comforting and makes me feel really good. My favourite meals are always curries and stews, so this lentil stew is definitely hearty for me! It’s super healthy and nutritious but it has so much flavour!! I highly recommend everyone to jump on the lentil bandwagon because they are honestly one of my favourite ingredients I’ve discovered since going veganđŸ€©đŸ‘đŸ»
