Vegan Grilled Cheese!πŸ₯ͺπŸ§€ Made with homemade Vegan Mozzarella. It’s melty, stretchy, salty, savoury, and SO cheesy! Use this mozzarella to make grilled cheese, top on pizza, lasagna or simply grab some nachos and dip. Only 7 ingredients and 10 mins (and made with pantry staplesπŸ‘Œ).

Vegan Mozzarella:
1 can coconut milk (400 ml)
1/4 cup almond milk
1/3 cup nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
Β½ tsp sea salt
3 tbsp arrowroot powder

In a blender add coconut milk, almond milk, nutritional yeast, garlic powder, onion powder, sea salt and arrowroot powder. Blend until smooth consistency. Transfer to saucepan and bring to medium-high heat. Warm mozzarella, stirring often, until thick and stringy in consistency (5-10 minutes).

Vegan Grilled Cheese:
4 tsp vegan butter, or coconut oil
2 slices sourdough bread
1/4 cup vegan mozzarella
pinch sea salt and pepper

1. Butter two slices of sourdough bread on both sides (i.e. butter all four sides) and sprinkle with sea salt. Bring a skillet to medium heat and toast the bread slices until golden in colour, then flip and toast the other side.
2. Once it’s ready, finish by lathering each toast with 2 heaping tablespoons of vegan mozzarella. Season with sea salt and pepper. Then flip one slice of bread onto the other to make a sandwich.
