?????? ?????? ? are a delicious way to include more vegetables in our diets and the great things is that they are made very quick and we can really add any vegetables we want or have at home!??
▪️1 Thin crust pizza – I used store-bought
▪️Tomato sauce
▪️2 cups non-dairy mozzarella cheese
▪️½ cup red bell pepper, sliced
▪️½ cup yellow  bell pepper, sliced
▪️½ cup orange  bell pepper, sliced
▪️½ cup purple onion, sliced
▪️2 cups arugula
▪️1 teaspoon red flake peppers, optional
▪️1 ½  teaspoon of avocado oil, divided
?Tomato sauce ingredients
▪️2 big cans of peeled tomatoes or about 6 cups of fresh diced tomatoes with juices – for this recipe you can also substitute it for canned tomato sauce 
▪️2 garlic cloves, minced
▪️½  cup onion, chopped
▪️¾  tablespoon of oregano
▪️2 tablespoon of basil
▪️1 teaspoon of avocado oil
??? ?? ???? ?????: Heat avocado oil in a saucepan and sauté onion and garlic for about 5 minutes. Crush tomatoes with your hands or with spatula and add to the pot, add seasonings too. Simmer for about 15 minutes and stir occasionally. Adjust seasoning to taste
To make sautéed veggies, heat 1 teaspoon of oil in a pan over high heat and sautée veggies for about 3 minutes
Brush pizza crust with ½ teaspoon of avocado oil, add tomato sauce first, then add mozzarella cheese on top, top with sautéed veggies. Bake at 450F for about 8-10 minutes, remove from the oven and add arugula on top and sprinkle red flake peppers if desired
