1 pack of vegan pepperoni (I used Yves veggie pepperoni)
1 pack of vegan mozzarella (I used Miyokos here!) 4 bagels (I used some made at a local bagel deli, just make sure whatever bagels you buy aren’t egg white washed and don’t have L-Cysteine listed as an ingredient, that is derived from animal or human hair and thats gross)
1 jar of pizza sauce (I used Rao’s Homemade)
1 1/2 tsp dried oregano
1 1/2 tsp red pepper flakes (or more if you like it spicy!)
grated vegan parmesan (optional)
Position an oven rack about 6 inches from the broiler, and turn the broiler on high
Spread 1/4 cup pizza sauce on each bagel, drop the mozzarella on, and scatter pepperoni on top (I used 10 per bagel)
Place the bagels on a large broiler safe baking pan, spray the tops of the bagels with some spray oil and broil for about 6 minutes or until the cheese is nice and melted and the pepperoni have a delicious slight char to them, keep a very close eye because these beauties will turn from charred deliciousness to burnt and inedible pretty quickly!
Sprinkle each one evenly with the dried oregano, red pepper flakes, and vegan parmesan if you please, and serve!
Tip: If you want a crispier pizza bagel, you can toast the bagels beforehand!
