BBQ Pulled Jackfruit Burger ?

Fruit and hamburgers are not the most obvious combination… unless you use young, unripe jackfruit! Practically tasteless and with a shredded texture, it’s the perfect substitute for pulled pork. Check out the Asian section of your grocery store or you local Asian supermarket. Oh and make sure you buy canned jackfruit in brine or water and not the sweet version in syrup.
The Ingredients ?
» Young jackfruit in brine or water, 1 can
» Onion, 1 medium
» Garlic, 2 cloves
» Vegetable oil, 2 tbs
» Paprika, chilli powder, cumin, coriander, to taste
» Barbecue sauce (vegan), 3/4 cup
» Salt and pepper, to taste
The Instructions ?
Drain and rinse the can of jackfruit. Let it dry thoroughly.
Use a knife to cut the jackfruit into pieces. Alternatively, shred into pieces with your fingers.
Heat the oil in a pan, add the chopped onion and cook until translucent. Mince and add the garlic. Cook until fragrant.
Add the shredded jackfruit and bake for 5 minutes until it begins to colour. Next, add the spices, salt and pepper and continue stirring occasionally.
Lastly, add the barbecue sauce and continue cooking on low heat until the desired texture is reached. The jackfruit will become more tender the longer it’s cooked. Bit by bit you can add water to make it saucier.
Optional: heat your oven to 180°C and transfer the pulled jackfruit into a lined oven tray. Bake for 15 to 20 minutes to get an even « meatier » texture.
Finishing touches ??
I served my burger with fresh vegetables, my favourite sauces and homemade crispy sweet potato fries with a garlic mayonnaise. But the possibilities are endless: you can add the jackfruit to wraps/fajitas, a chilli, a hearty stew, … Just adjust your spices for the desired flavour and enjoy this vegan version of pulled « pork ».
