We eat with our eyes first, but did you know there is research to back it up? A study in the late 1970’s showed that, when we find food more appealing, not only do we enjoy it more we also absorb more nutrients from it. Perhaps that’s why I always love eating colorful foods and focus so much on my food presentation. This heartwarming Coconut Quinoa breakfast bowl with maple tahini and locally grown oranges is one of my favorite bowls I photographed while back. Grab the recipe right here!

Coconut Quinoa Bowl with maple tahini
Makes 1 serving
Ingredients:
2 1/4 cups of plant milk of your choice. I used coconut milk the beverage kind.
3/4 cup uncooked Quinoa
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cardamom (optional)
2 tsp of good quality tahini sauce and 1 tsp more for the topping.
1 tsp of maple syrup
Pinch of salt
Method:
Pour 2 cups of plant milk into a saucepan over high heat. Bring milk to a boil, add quinoa and reduce heat to medium and simmer, covered, for 15 minutes. Add the spices.
Remove from the heat, add 1/4 cup of milk and the 2 tsp of tahini sauce. Set aside. Take 1 tsp of tahini and combine it with 1 tsp of maple syrup. Add the cooked quinoa porridge in the bowl, topped it with sweet tahini sauce, fruits, dark chocolate and enjoy!
