PUMPKIN SPICE QUINOA PORRIDGE 🎃🧡
I said earlier in the week that I want to make a conscious effort to start eating breakfast. Here’s me, making a conscious effort to eat breakfast.
It’s a struggle, I’m so used to fasting in the mornings that I really find it hard to eat much before 12 o’clock.
Anyone else the same?
@bambinova_ kindly gifted me this beautiful coconut bowl. How could I skip breakfast today when I could eat it in this? 💗
I’m definitely for the finer things in life and this bowl makes me happy 🥰🤗
Ingredients (serves 1)
3/4 cup quinoa
1 cup water
1 cup plant based milk (I used sweetened soya)
2.5tsp brown sugar (or sub for maple syrup / sweetener)
1/4 (level) tsp nutmeg
A pinch of ground ginger
1 clove – bashed in a pestle and mortar to a fine dust (or sub for 1 pinch of ground cloves)
Add the quinoa and water to a pan and boil on high heat for 7 minutes, stirring frequently.
Add in milk, pumpkin spice and brown sugar, whisk through.
Reduce heat and simmer for 15 minutes, continuing to whisk frequently.
Garnish with fruits, granola and cinnamon.
