No-bake matcha & white chocolate cheese cake 💚

Recipe (24cm / 9.5 Inch Tart Pan with Removable Base)
◆Ingredients: .
■Crust:
2/3cup (80g) raw walnuts
1/4 cup (40g) raw hazelnut
70g sunflower seeds
2 Tbsp. (10g) shredded coconut
3 Tbsp. raw cacao powder
2 Tbsp. melted raw cacao butter
2 Tbsp. raw cacao nib
5 pitted Medjool dates (100g)
1/8 tsp pink salt .
■white chocolate cheesecake layer:
1 cup (120g) raw cashews (soaked 4-6 hours and rinsed)
1/2 cup (120ml) coconut cream
4 Tbsp. melted raw cacao butter
4-5 Tbsp. maple syrup
1 Tbsp. lemon juice
1/2 tsp lemon zest
1/4 tsp vanilla bean paste
pinch of pink salt
◾️Matcha cheesecake layer:
1.5 cup (180g) raw cashews (soaked 4-6 hours and rinsed)
3/4 cup (180ml) coconut cream
5 Tbsp. melted raw cacao butter
5-6 Tbsp. maple syrup
3 Tbsp. lemon juice
2-3 tsp matcha powder
1/2 tsp lemon zest
pinch of pink salt
**You can substitute maple syrup & coconut cream with raw agave & almond milk for raw version
◆Method :
(1) Pulse every ingredient for the crust until well processed but still slightly crumbly. Press the mixture into the tin.
(2) In a high speed blender place every ingredient for the white chocolate cheesecake layer and blend well until smooth. Add more sweetener if you want. Layer the filling above the crust. Freeze it until set.
(3) Repeat the same process for the matcha cheesecake layer. Add more matcha powder and sweetener if you want. Freeze it over night.
(4) Take out the cake from the freezer and remove it from the tin. Spread the whipped coconut cream on the top. Garnish with your choice of fruits and shredded vegan dark chocolate.
(5) Drizzle maple syrup before eating if you need.
