Nattō Cheese Okonomiyaki ?
Okonomiyaki is a savory Japanese pancake, made with wheat-flour-based batter, shredded cabbage, and your choice of ingredients , and topped with a variety of condiments.
Nattō is a traditional Japanese food made from fermented soybeans, incredibly nutritious and characterized by a slimy, sticky and stringy texture.
For the original one, they use egg for batter, pork or seafood for the ingredients, and bonito for the condiments.
Followings are the ingredients for my vegan version Okonomiyaki
Ingredients (serving 1)
-1/2 cup flour
-1/4 cup water
-1/2 tsp kelp powder
-1/4 tap shiitake powder
-3TBS grated Chinese yam
-300g finely shredded cabbage
-1 TBS pickled red ginger
-1 Pack of Nattō
-2 TBS corn
-1 TBS Tenkasu (crunchy bits left overs of cooked tempura)
-1 TBS shredded vegan cheese
-1 TBS grated white sesame
-Aonori (seaweed powder),
Tonkatsu sauce is a thick sauce made of veggies and fruits, usually for Katsu, I use the Bull-Dog brand Tonkatsu sauce from @bulldog_sauce . It’s vegan, and so tasty
1 in a bowl, mix flour with the water and grated yam, kelp and shiitake powder, pinch salt and white pepper until it is smooth batter, if it’s too thick or dry, add more water
2 add in shredded cabbage, pickled ginger, Nattō, sesame, and corn, mix together
3 in a frying pan, grease with a splash of vegetable oil, pour the batter to the pan in a nice even circle
4 top with vegan cheese
5 cook for 5 minutes over medium heat or until bottom is nicely burnt, 6 flip over and press lightly with a spatula to cook on the other side for 3-5 minutes
7 flip the completed Okonomiyaki over onto a plate and drizzle Tonkatsu sauce and vegan mayo, sprinkle aonori
