Look at those cute little apple turnovers that I made (recipe below ⬇️)! Apples are some of my favorite fruits (next to bananas and berries), but if you eat them hot and with some cinnamon, it makes them a million times better in my opinion… ? So definitely check this recipe out, you won’t regret it!

Ingredients:
1 sheet of puff pastry
2 apples
1 tsp margarine or vegan butter
pinch of cinnamon
2 tsp lemon juice
½ tsp vanilla extract
2 tbsp brown sugar
2 tbsp of vegan cream cheese or yoghurt
dash of plant milk

Cut the apples into little cubes and cook them in a small pot with the margarine, cinnamon, lemon juica, vanilla extract and 1 tbsp of the brown sugar. Let the mixture simmer on low heat for about 10 min or until the apple pieces are really soft.
In the meantime, cut the puff pastry into about 16 squares, this will be 8 turnovers in the end (you’ll need two pieces for one turnover, one bottom and one top piece). Spread half of the squares with cream cheese/yoghurt and the add the apple mixture, make sure to leave some space at the edges so you will be able to close them. Then put another square on top and seal it by pressing a fork around the edges. Brush the pastries with some plant milk and sprinkle with a bit of brown sugar. Bake them in the oven at 180°C for about 20-25 minutes or until golden brown. Serve with some powdered sugar on top.
