KOREAN SWEET PANCAKES (HOTTEOK) WITH CINNAMON FILLING

Fluffy pancakes called “Hotteok” are a traditional Korean street food snack. They are filled with sugar mixed with various delicious ingredients like nuts and cinnamon. Which street food is your favourite?

🍽️ 10 pancakes

Dough:
1 cube (42 g) fresh yeast
280 g semi-coarse flour
200 ml plant milk
1/2 teaspoon salt
1.5 teaspoons sugar
oil

Filling:
100 g brown sugar
3 tablespoons crushed walnuts
1 teaspoon ground cinnamon

Optional:
forest fruits (strawberries, blueberries, raspberries)
plant yogurt

1. Mix the flour with salt in a large bowl.
2. Dissolve the yeast with 1.5 teaspoons of sugar in warm plant milk. Pour the mixture into the flour and work the dough.
3. Cover the dough with a clean cloth and leave to rise in a warm place for one hour.
4. Mix brown sugar, cinnamon and nuts in a separate bowl.
5. Divide the dough into 10 parts with oiled hands. Form a ball from each part and flatten with your fingers into a round pancake.
6. Put the sugar filling in the middle of each pancake, carefully join the edges, shape again into a ball and gently flatten into a thicker stuffed hotteok pancake.
7. Heat the oil in a frying pan over medium heat.
8. Fry the pancakes on both sides for 0.5-1 min. Then flip them over again, turn the flame down,
cover with a lid and let the sugar melt inside the pancakes for 1 min.
9. Serve the pancakes warm with plant yogurt or forest fruits.
