Kheer // Rice Pudding .
– πŸ‘©β€πŸ³ Ingredients
5 cups milk
1 tsp ghee
1/6 cup white rice (rice to milk ratio is 1:16)
8 tsp powdered sugar
1/8 tsp cardamom powder
1 tsp Milk with few saffron strands
Few chopped almonds and pistachios
Few raisins .

– πŸ“ Instructions

1️⃣ Soak rice in a bowl of water for 3-4 hours
2️⃣ Add ghee and milk to a thick bottomed pan and bring it to boil on low flame while stirring continuously
3️⃣ Add rice to it and keep it on the low flame; stir continuously until rice is cooked (~50 mins: rice turns mushy and breaks easily with spoon)
4️⃣ Add sugar, cardamom powder, 1 tsp saffron milk and dried fruits to it (don’t add sugar earlier as the rice won’t cook)
5️⃣ Keep stirring on low flame for another 10 minutes and then turn off the flame
6️⃣ Serve hot or cold in a bowl
