Hiroshima-Yaki 🥞 🌱
Savory Japanese pancake, which is very similar to Okonomiyaki. Hiroshima is name of the city in Japan.
The biggest difference is that all of the ingredients are mixed together in Okonomiyaki before cooking, and everything is cooked together. In Hiroshimayaki, each ingredient is cooked separately and then stacked together like a stack of pancakes.
Here is how to make Hiroshima-Yaki
Ingredients (serving 1)
3TBS flour, 1/2cup water, 1/2tsp kelp powder, a large handful shredded cabbage, one pack of boiled yakisoba noodle, pickled red ginger, shredded abura-age, grated sesame, aonori (seaweed powder), Tonkatsu sauce, vegan mayo
Tonkatsu sauce is a thick sauce made of veggies and fruits, usually for Katsu, I use the Bull-Dog brand Tonkatsu sauce from @bulldog_sauce . It’s vegan, and so tasty
1 in a bowl, mix flour with the water and kelp powder, pinch salt and white pepper until it is smooth batter
2 in a frying pan or hot plate, grease with a splash of vegetable oil, pour a ladle of batter to the pan in a nice even circle, like making a crape, sprinkle grated sesame, place cabbage, abura-age, and pickled red ginger
3 pour 1TBS batter on the top, cook for about 5 minutes, then flip over and press lightly with a spatula to cook on the other side
4 while cooking, grab another pan and cook 1 pack of yakisoba noodle with a bit of vegetable oil and Tonkatsu sauce
5 once the yakisoba noodles are cooked, with a spatula move the Hiroshima Yaki on top of the noodles
6 in a batter bowl, add 1TBS flour, and 1tsp Vegg yolk from @thevegg and 1/2cup water, mix together to make ‘egg’
7 in a first pan, heat little oil, pour Vegg then place the Hiroshima Yaki (with the noodles underneath) over the Vegg and leave to cook for 2 to 3 minutes.
8 flip the completed Hiroshima Yaki over onto a plate and drizzle Tonkatsu sauce and vegan mayo, sprinkle aonori
