Happy National Oatmeal Day! ?
What a great day; oatmeal is truly one of my favorite foods! It is so versatile, easy to make, and nutritious!
I love making overnight oats for early mornings on my hospital rotations, travel, work, or just another fun breakfast.
Today I added a packet of @kencko “purples” to some quick microwave oats for extra vitamins and nutrients: each packet has 2.5 servings of fruits and veggies! ?Click the link in my bio for a discount on kencko to try their smoothies for yourself – they are great on their own or in oats like this!
½ cup oats
¾ cup plant milk
1 packet kencko purples
1. Mix ingredients in a microwaveable bowl and microwave 1-2 minutes.
2. Top with berries, tahini, and shredded coconut, and enjoy!
You can also make this as overnight oats by mixing all the ingredients – including berries – in a jar and letting it set in the fridge overnight.
