🥕Gajar ko kheer (Carrot Pudding)🥕and it’s vegan, made in almond milk🌱 This was actually made by my mom❤️…well I assisted her with the prep work and tasting😄
Today is/was (yesterday in Nepal🇳🇵) observed as “Kheer Khane Din” (day to eat kheer:)). Traditionally, kheer refers to rice pudding and is slowly cooked in plenty of milk with rice grain and varieties of dry fruits and nuts and a few strands of saffron. We planned to make something quick and different for today’s celebration, and so substituted rice with 🥕🥕🥕🧡 If this was made a bit dry, I guess it would qualify to be called as “Gajar ko Haluwa”😄
This yummy food got both thumbs up by all in the family, so my mom is v happy😄❤️

Ingredients used: Carrots – grated, Almond milk, Cashew, Raisin, Saffron, Jaggery/Sakkhar, and Pistachio just to add some green color for insta post 😄💚
* Soak a few strands of saffron in a tablespoon of hot water
* Cook grated carrots in plant-based milk…in plenty so it’s soft, add as needed
* Add jaggery (can substitute it with coconut sugar or any other)
* Add toasted cashew (in a few drops of coconut oil until slightly brown) and raisin towards the end
* Serve it hot, warm or chilled
