Friday treat for autumn…. Fruit, Cinnamon Bars ๐ŸŒฑ. These are perfect for snacking on and perfect for fruits that are in season. It looks lush when the fruit oozes on top ๐Ÿฅฐ…. one is never enough!! .

You will need:
200g light brown sugar
300g vegan salted butter, melted
500g plain flour
2 tsp ground cinnamon
60g of mixed nuts, roughly chopped ( I used cashews and walnuts)
15g of rolled oats mixed with the nuts
FOR THE FILLING
225g blackberries and raspberries
150g apple, peeled, and diced
5/6 tablespoons of maple syrup
2 tbsp cornflour
zest of 1 lemon and the juice of ยฝ lemon

Preheat the oven to 180ยฐC, gas mark 4, Grease and line a tray.
Stir the sugar into the melted butter and then add the flour and cinnamon. Fold until combined. Save a third of the mixture and set put in the fridge, press the rmixture into the bottom of the tray and bake in the oven for 20/25 minutes or until golden,then put aside to cool.
Into a bowl, mix all of the filling ingredients. Spoon onto the baked base. Take the chilled dough out of the fridge and mix in with the nuts and the oats and crumble in, then sprinkle this over the fruit mixture in the tray. Return to the oven and bake for another 40 minutes, until the fruit has softened and the crumble is golden. Cool completely, let it chill for 10 minutes before cutting into bars/squares…. enjoy peeps! ๐Ÿฅฐ
