Stone Fruit Crisp
[gluten free, grain free, dairy free, paleo friendly, vegan, vegetarian]
👉Filling:
6 ripe pitted cut stone fruits (peach, plum,1 bag of cherries)
2 tsp cinnamon
1/4 tsp ground ginger
3 tsp organic granulated coconut sugar
1 tsp pure vanilla extract
1 tbsp tapioca flour or arrowroot
👉Crisp topping:
1/3 cup melted organic coconut oil or vegan butter (*note-can sub in unsalted butter)
1/2 cup chopped raw unsalted pecan halves
1/4 cup chopped raw unsalted walnuts
1/4 cup chopped raw unsalted almonds
3/4 cup blanched almond flour @bobsredmill
2 tbsp grade A maple syrup (not pancake syrup)
1 tsp pure vanilla extract
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp sea salt @celticseasalt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
1. Preheat oven to 350. Select either one medium oven safe container, cast iron skillet or smaller ramekins and grease.
2. In medium bowl combine all filling ingredients, gently folding to not break up ripe fruit. Set aside.
3. In separate bowl, combine all filling ingredients except coconut oil/vegan butter. Mix well, then add in oil/butter. It will start to clump up. Set aside.
4. Dividing evenly, place fruit in container, add crisp topping to your preference.
5. Heat in oven for 20-30 min (topping should be toasted, fruit bubbling). ¡Salud!
