what if i told you i have a recipe that would make it perfectly acceptable to have “ice cream,” for breakfast?! oh, & it’s made with whole food ingredients, is packed with protein, & you truly can’t tell the difference.🥰
often when i am with my kids on the carpet, i send them back in creative ways so i don’t have 20 kids going back at one time. sometimes it’s by birthday, sometimes it’s by the color they’re wearing, & sometimes it’s by the breakfast they had that morning. every once in a while you’d hear a kid say, “ice cream,” especially if it was their birthday.🎉
it got me thinking, what if i could create a protein packed, healthy, “ice cream” that would be delicious & nutritious for snack, dessert, or even breakfast. enter mint chocolate chip protein “ice cream” – & it’s not the 5 dollar a pint filled with ingredients my body can’t recognize.😉
🍦1 medium avocado
🍦1, 13.5 ounce, can organic unsweetened light coconut milk
🍦1/3 cup pure maple syrup
🍦1/3 cup cold water
🍦2 scoops @drinkorgain organic plant based vanilla bean protein powder
🍦1 tablespoon pure vanilla extract
🍦2 teaspoons pure peppermint extract
🍦1/2 cup @lilys_sweets dark chocolate chips
🍨in a food processor, combine the avocado & coconut milk, & pulse to combine.
🍨add the maple syrup, vanilla, peppermint, protein powder, & cold water, & blend until creamy.
🍨fold in the chocolate chips.
🍨transfer the mixture to a resealable container, & freeze 2 to 3 hours, stirring every 20 minutes to keep the “ice cream,” from getting to icy.
🍨let thaw for 5 minutes before serving.
