Week 1 Vegetarian ?

Ingredients:
? 1/2 tsp cooking oil
? 1/2 cup basmati rice
? 2 cardamom pods
? 3 cloves
? 1/2 tsp cumin seeds
? Sprinkle of turmeric
? Salt to taste (optional)
? Diced white onion
? Diced carrots
? Diced potatoes
? Peas
? Sweetcorn

Method:
? Wash and rinse the rice in cold water
? In a heated pan, lightly fry off your rinsed rice for a few minutes, you can do this without oil in a non stick pan or with a little oil in a stainless steel pan, be careful not to burn/brown the rice
? Once the rice is lightly fried, leave it to one side
? In a separate heated pan, add oil, cardamom, cloves, cumin seeds and allow to sizzle
? Next add all of your vegetables, salt and turmeric
? Next add your lightly fried rice and enough water to steam cook it (roughly 1.5 cups but it may be less/more)
? Bring the water to a boil, then turn it down to a low heat, pop the lid on and cook until all the water has soaked in and the rice is cooked through

? Little one had this with cucumber, tomatoes and medjool dates for dessert ?

? NOTE: Remember to take out the cardamom and cloves before serving, little one doesn’t want to bite into those ?
