VEGAN TIRAMISU CAKE. Recipe below… This vegan version of the traditional Italian dessert Tiramisu will blow your mind with its natural sweetness and coffee chocolate flavour.

INGREDIENTS
Base Layer:
1 cup walnuts
¾ cup soft medjool dates (approx 8), pitted
¼ tsp instant coffee powder dissolved in 1 tbsp hot water
1 tsp vanilla paste
1 cup rolled oats
Pinch salt
Chocolate Mousse Layer:
1½ cups walnuts
1½ cups raw cashews
1½ cups soft medjool dates (approx 15), pitted
1 cup maple syrup
1 cup plant milk (bonsoy)
6 tbsp cacao powder
2 tbsp white chia seeds
2 tsp vanilla paste
3 tsp instant coffee powder dissolved in 1 tbsp water
1 tsp salt
Cream Layer:
1 cup raw cashews
½ cup plant milk (bonsoy)
1 tbsp white chia seeds
4 tbsp maple syrup
2 tsp vanilla paste
Pinch salt
To Serve:
Cacao powder for dusting
Cacao nibs for sprinkling

METHOD
Set aside a 10 inch spring-form cake tin lined with baking paper. For the base layer: Place all the base ingredients into a high powered blender and process to a sticky crumb, then press into the lined tin. For the chocolate mousse layer: Place all mousse layer ingredients into a high powered blender, then pour over the top of the base layer. For the cream layer: Place all cream layer ingredients into a high powered blender and blend until smooth. Pour into tin, on top of the mousse layer. Cover and freeze overnight.To serve: Remove from the freezer, dust with cacao powder and sprinkle with cacao nibs. Run a hot knife around the inside edge of the spring-form tin. Remove the cake from the tin and cut it into 16 wedges. Eat now or freeze cake wedges for a later date.
