VEGAN RICE KHEER/INDIAN RICE PUDDING RECIPE ??

This beautifully fragrant milk based Indian dessert is prepared with soya milk, rice, cardamom pods and sugar, simmered together until the rice has softened and the texture is lushiously creamy.

Ingredients:

*50g basmati rice
*500mls soya milk
*3 tablespoons sugar or as preferred
*2 cardamon pods
*A few drops Indian rose water
*Topping – chopped nuts

Method :

1. Wash and soak the rice for 15-30 minutes.

2. In a sauce pan on a low-medium heat add the soya milk and rice bring to a gentle boil and then lower the heat.

3. Cover and leave to simmer for 15-20 minutes. Occasionally stir well to prevent the rice and milk from sticking to the bottom of the pan.

4. Add sugar, cardamom pods and some soya milk if pudding is too thick, cover and continue to cook for a further 10 minutes.

5. Once the rice has completely softened, soya milk has reduced the consistency should be thick and creamy. Add more soya milk if you prefer it less thick and a smoother consistency.

7. Allow to cool.

6. Before serving remove cardamon pods, stir in a few drops of rose water and garnish with some toasted chopped nuts.
