for Rosh Hashanah (Jewish new year) festivities this past weekend… baked this MARVELOUS traditional cakeβ€” full of sweet golden raisins, maple syrup subbed for lots of honey, a lovely gingerbread-like flavor & amazing crumbly cake texture 🀩

Vegan Honey Cake for Rosh Hashanah by @theveganatlas 🍯 makes TWO LOAVES to extend the celebration for both days 🀀
dry ingredient mix of whole wheat flour, baking soda/powder, spiced with cinnamon, ground ginger & nutmeg, then whisked in the wet ingredients apple sauce, 1 cup of maple syrup, olive oil & vanilla. folded in hella raisins, poured into 2 lined loaf pans, sprinkled over sliced almonds, then baked at 325° for 40-50 mins. easy AS HECK! hoping to bring in sweetness for the new year 🀀

*note: my cakes came out a bit drier than the ideal moist pound cake textureβ€” I think I over baked slightly & added too many raisins so they took out moisture. still tasted absolutely AMAZING, was perfect for a breakfast cake AND for nightly dessert 😍
