Vegan Banoffee Pie ?

I had a lot of fun making this. Super easy & quick to make.
I get excited when a dessert is transformed into a vegan friendly and refined sugar free delight.
Yes dates & maple syrup are high in sugar but they are also packed with other nutrients that make my heart sing. Honestly, I was just dancing around my kitchen excited for the taste tester, and it didn’t disappoint. How yummy is healthy food!! Hands down better than anything that is processed, and I’m not being bias!! Not only does it taste good but you feel good too. Sorry about the rambling, I’m just so passionate about food and how healthy food doesn’t have to be tasteless and boring. Get in the kitchen and experience the sensations of eating whole foods, I promise you will enjoy it.

Ingredients:

Base:
2 cups Oats
1/2 cup cashews
1 tbsp cinnamon
4 tbsp maple syrup

Caramel layer
– 1.5 Cups dates (soaked)
– 3 tbsp smooth peanut butter
– 1/3 cup of water (use water the dates were soaked in)
– 1 ripe banana

Top
– 250ml of vanilla coconut yogurt @purecocobella
– grated chocolate to sprinkle on top

Method:

1. Preheat oven to 180C. Place all base ingredients into a food processor and blend to combine. Pour into a non stick round springform cake pan and press to spread mixture out evenly. Bake for 15mins.

2. Place all caramel layer ingredients into a food processor and blend to form a smooth paste like consistency.
Once base is cold and slightly cooled spread over the base to cover. Slice a banana thinly and place on top of caramel layer.

3. Dollop yogurt over caramel/banana layer and spread out evenly. Sprinkle with chocolate ? slice & enjoy ☺️
