Strawberry Rhubarb Pie with Homemade Olive Oil Almond Meal Pie Crust (Vegan)

This pie dough recipe shared by @breadbaking.orthopod is the easiest (it literally took me less than 10min to make this with no help of machine), healthiest and my new favourite pie crust. Made from olive oil & dairy free, this makes it a vegan recipe. The crust tastes so nutty from almond meal and crispy (biscuit like). I found the perfect pie crust for dessert pie.
A tip shared by @breadbaking.orthopod :Sprinkle almond meal on the pie crust to form a seal between the pie dough and the filling and will help make the crust crisp. It works!

For 9” single crust;
163grm AP flour (70%)
71grm Almond Meal (30%)
58.5grm olive oil (25%)
58.5grm water/milk- used oatmilk (25%)
1/4 tspn salt

? Mix all ingredients
? Press dough into pan
? Cover with cling wrap and refrigerate at least 1 hour before using (I refrigerated overnight as I made this a day before)

Filling made from; Strawberries + Rhubarb (4 cups),1 tbspn cinammon powder, 2 tbspn brown sugar, 1 tbspn olive oil, 1 tbspn cornstarch, 1 tspn vanilla extract

Baked at 190 deg c for 50min
