Soy garlic tofu buddha bowl!🤤🥳

Yesterday (Sunday), I was testing a recipe for crispy baked tofu cooked on a delicious (overly salty😂) garlic soy sauce. I had some leftover so here’s how I tried to masked in all the saltiness my tongue couldn’t get used to.

Bowl ingredients (measurements are not accurate, since I just eyeballed everything… as usual but you do you. Add more or less or use different ingredients):
🌱2 handful of hand torn kale, massaged or microwave for 15 seconds
🌱a little over a cup cooked brown rice
🌱2/3(?) C cooked black eyed beans
🌱some cucumber, diced
🌱red bell pepper, diced
🌱1/3 ish C frozen corn, microwaved
🌱some purple cabbage, chopped
🌱plant protein source: 5 pieces of garlic soy tofu

I haven’t been posting food content for like 2 weeks. I forgot 😂 but I’m almost always updated on my story so yeah! Food inspo (if I don’t post) will always be on my story!☺️

Topped it all of with homemade creamy ranch and a friendly drizzle of sriracha. Added some toasted black & white sesame seeds too

For dessert, I ate some fresh strawbs. Now, my gut and myself are both satisfied!❤️
