So, what do you do when you are completing a 42-hour fast for Meal-less Monday you might ask? Bake a vegan fall dessert for your family, of course! πŸ˜‚πŸ˜‚πŸ˜‚

Easy Vegan Fall dessert:
Preheat oven to 350F.

1 box white or yellow cake mix (Betty Crocker is vegan). Alternatively, you could use spice mix and omit the spices I added to the dessert.
1 can pumpkin puree- 15oz (I actually used pureed butternut squash instead because we have a huge crop from our garden and I wanted to use it up πŸ˜€)
1.5 cups peeled chopped apples
1/2 water
1 tsp pumpkin spice
1 tsp cinnamon

Mix all ingredients in a medium size bowl. Grease a 9×13″ baking pan. Pour batter. Sprinkle 1/2 cup walnut pieces on top- optional but I recommend it. I love walnuts. πŸ₯° Half my family don’t care for them though, so I only sprinkled the walnuts on half of the cake. πŸ˜€

Bake for 40-45 minutes or until a toothpick comes out clean. You could serve with vanilla ice cream or a simple cream cheese frosting or a sprinkle of powdered sugar. My husband and kids ate it plain, and enjoyed it. πŸ‘πŸ»πŸ‘πŸ»πŸ‘πŸ»
