Slow Sunday morning making granola and dukkah. I make the granola up as I go along, and vary what I put in it, but a rough recipe is below. Use a regular sized mug to measure everything out.⁣

– 2 mugs of oats (I use the Kavanagh organic ones from Aldi as they are really chunky)⁣
– mug of buckwheat⁣
– mug of seeds (I use pumpkin, sunflower and a sprinkle of chia)⁣
– mug of nuts, chopped. I used almonds and hazelnuts today, but sometimes add pecans, too.⁣
– zest of 3 lemons and an orange (you can use less than this or none at all.)⁣

Mix everything together in a bowl, then add a big spoonful of melted coconut oil ( I use a couple of dessert spoons). Today I also added two big spoons of peanut butter to the saucepan and melted it with the coconut oil. I’ll sometimes add maple syrup too. It depends how sweet you want your granola. Mix your liquid with the dry ingredients, and mix it well! Lay out over two baking trays and cook for about 30 mins at 170, turning it regularly so the edges don’t burn.⁣

I put mine on sheets of baking paper so there’s less to wash up, and it makes a handy funnel to get the granola into a jar once it’s cooled down.⁣
