Might be loosing my mind, but I ain’t loosing my grip on these babies ?
I get tons of DMs asking me what I eat throughout the day & if I consume all the sweets I make. Obviously, yes guys, I eat more than treats. I just have a special place in my soul for healthy baking. I avoided sweets like COVID for so many years, depriving myself, that they make me really frkn happy to be able to enjoy now; hence why I love sharing them with all of you, in hopes of showing how “healthier” doesn’t equate to deprivation. & to be perfectly honest I cannot make savory food look aesthetically pleasing ? I’ll leave that to all you masters out there.
Growing up my mom would always make my family “dessert” AKA boxed brownies smothered in cool whip & topped with strawberries. Basic AF & her idea of “homemade” but we LIVED for them. I recreated them awhile back, in Dani fashion, & was so so happy with them! All the nostalgia of my kiddo years but with a healthier twist & that’s why I love doing it!
FUDGY BROWNIES WITH RASPBERRY COCO WHIP
1/2 cup almond flour
1/2 tsp baking soda
1/3 cup cacao powder
2 flax eggs (can sub real eggs)
1/4 tsp sea salt
1/3 cup maple syrup
1/2 cup coconut sugar
1/4 cup coconut oil
3/4 cup chopped @evolvedchocolate chocolate
1 tsp vanilla
1/3 cup @georgiagrinders peanut butter
•For the raspberry coco whip:
1 container @so_delicious Coco Whip (Can sub other cool whip if desired or make homemade coco whip)
1/4 cup raspberry jam or fresh raspberries
Preheat oven to 350. Melt the chocolate & oil together. Then add in remaining went ingredients, until smooth. Stir in the dry. Spread evenly in a lined 8×8 pan & bake for 20-22 min. Let cool. To make the whip, just combine the coco whip & jam or berries! Spread on top! (Keep in fridge!)
