Pumpkin Spice Apple & Blueberry Crumble🌱

What’s your favourite British dessert? Mine is definitely apple crumble! This vegan apple and blueberry crumble recipe is packed with tart Granny Smith apples, succulent blueberries, warming spices and topped with a crispy oat crumble.
This crumble is perfect served warm with vegan custard or ice cream and caramel sauce. This classic British dessert is incredibly quick and easy to prepare, gluten-free and can be made in advance and stored in the freezer.

Ingredients:
-1kg Granny Smith apples, peeled & cored
-200g blueberries
-1 tsp corn starch
-100g soft light brown sugar
-1 tsp cinnamon
-1/2 tsp nutmeg
-1/4 tsp salt
-1/4 tsp ground ginger
-1/4 tsp ground cloves
-1 tsp vanilla extract
– Juice of half a lemon

Crumble:
-170g plain gluten-free flour
-150g rolled oats
-130g soft light brown sugar
-1 tsp cinnamon
-1 tsp vanilla
-180g vegan butter @naturli

Method (Serves 4-5):
-Preheat the oven to 200C. Add the apples, blueberries, sugar, corn starch, vanilla, spices and lemon juice in a medium baking dish and combine. Place in the oven to cook for 35-40 mins until the apples are tender and the juices and bubbling.

-For the crumble topping, mix the flour, oats, cinnamon, vanilla and sugar in a bowl. Rub the butter in with your fingertips until the mixture looks like moist breadcrumbs.

-Evenly pour the crumble mix over the baked apples and blueberries. Put back in the oven for 10-15 mins at 180C, until the top is golden and crisp.
